El café más famoso de Florencia empezó siendo una cervecería alemana de los hermanos Reininghaus, y el nombre se lo pusieron los camareros: nadie sabía pronunciar el rótulo, así que se iba a donde los de las chaquetas rojas. Ya como Giubbe Rosse les sirvió luego de redacción a los futuristas, y en 1911 estalló aquí una pelea con los colegas de oficio de Milán que no se terminó hasta la estación. Durante el fascismo se ordenó a los camareros quitarse las americanas rojas y ponerse blancas, y entre las mesas circulaban confidentes de la OVRA anotando quién decía qué. El rojo no volvió hasta después de la guerra.
