Florence's most famous café started out as the Reininghaus brothers' German beer hall, and got its name from the waiters: nobody could pronounce the sign, so you went to the ones in the red jackets. As the Giubbe Rosse it later served the Futurists as an editorial office, and in 1911 a brawl broke out here with their opposite numbers from Milan that was only finished off at the station. Under Fascism the waiters were made to take off the red jackets and put on white ones, and OVRA informers circulated between the tables reporting who said what. The red came back only after the war.
