Kraków once had its own recipe for coffee, and it was not black: kawa po polsku was brewed under a covering saucer, with milk or thick cream as a matter of course, and served with a heavy skin on top. The city's first coffee house was run by Marianna Sędrakowska in a townhouse on Rynek Główny: she charged three grosze and served her guests herself. Benches stood along the walls, and the tin spoons were chained to the tables. That is how much anyone who came in for a coffee was trusted back then.
