Bicerin, in Piedmontese simply "a small glass", is chocolate, coffee and cream in layers that are never stirred - and for years it was a loophole in the fast. Hot chocolate did not count as food, so you could drink it with a clear conscience, and the place that has served the drink since 1763 stands across from the sanctuary of the Consolata: you came out of morning mass and went straight over the square. It was ordered three ways - pur e fiur, pur e barba and 'n poc 'd tut, meaning "a bit of everything" - and it was the last version that won, the only one you can get today. Women ran the cafe for almost the whole twentieth century, one of them for fifty years from 1917, and it was they who made it a place where women came on their own.
