Milan: la escena cafetera
La palabra espresso se refirió por primera vez al café en la feria de Milán de 1906, junto a una máquina que Luigi Bezzera patentó y que Desiderio Pavoni supo vender. Bezzera no andaba trasteando con el sabor, sino con el tiempo: era industrial y quería acortar las pausas que su gente se tomaba para el café. Así que el portafiltro extraíble, ese mismo que el barista encaja en el grupo en cada shot, viene de la impaciencia de un patrón y no del amor al café. Pavoni montaba esas máquinas a una por día en un taller de la via Parini, y fue él, no el inventor, quien ganó dinero con el nombre.
