Firenzes mest berømte café begyndte som brødrene Reininghaus' tyske ølstue, og navnet fik den af tjenerne: ingen kunne udtale skiltet, så man gik ned til dem i de røde jakker. Som Giubbe Rosse fungerede den siden som redaktion for futuristerne, og i 1911 brød der et slagsmål ud med kollegerne fra faget i Milano, som først blev gjort færdigt på banegården. Under fascismen fik tjenerne besked på at tage de røde jakker af og de hvide på, og mellem bordene gik OVRA-stikkere og indberettede, hvem der sagde hvad. Det røde kom først tilbage efter krigen.
