Kaffescenen i Milan

Ordet espresso syftade på kaffe för första gången på mässan i Milano 1906, vid en maskin som Luigi Bezzera patenterade och Desiderio Pavoni kunde sälja. Bezzera petade inte i smaken utan i tiden: han var fabrikör och ville korta ner rasterna som hans folk tog för att dricka kaffe. Den löstagbara portafiltern, samma som baristan slår in i gruppen vid varje shot, kom alltså ur en arbetsgivares otålighet, inte ur kärlek till drycken. Pavoni satte ihop maskinerna en om dagen i verkstaden vid via Parini, och det var han, inte uppfinnaren, som tjänade pengar på namnet.
