Het woord espresso sloeg voor het eerst op koffie tijdens de Milanese beurs van 1906, bij een machine die Luigi Bezzera had gepatenteerd en Desiderio Pavoni wist te verkopen. Bezzera sleutelde niet aan de smaak maar aan de tijd: hij was fabrikant en wilde de pauzes bekorten die zijn mensen namen om koffie te drinken. De uitneembare portafilter, dezelfde die de barista bij elke shot in de groep klikt, komt dus voort uit het ongeduld van een werkgever, niet uit liefde voor de koffie. Pavoni bouwde die machines er één per dag in zijn werkplaats aan de via Parini, en hij, niet de uitvinder, verdiende aan de naam.
