About coffee in Erlangen
The formula for caffeine was settled by a man who lasted three years in Erlangen. Emil Fischer took the chair of chemistry here in 1882, and it was here that he worked out the structure and synthesis of caffeine, theobromine and theophylline, the three molecules that coffee, cocoa and tea stand on. The town itself he dismissed coolly in his memoirs: there was not much about it to attract you, but a professorship is a professorship. He collected his Nobel two decades later, somewhere else by then - coffee got its chemistry in a town its chemist never took to.
