Specialty coffee in Bialystok

Białystok has a roll of its own that it does not bake at home. The bialy, a flat round with a hollow filled with onion and poppy seed, came out of the city's Jewish bakeries as far back as the 19th century: men worked the dough, women sold the finished rolls, and the last batch left the oven around five in the morning. The recipe left for New York along with the bakers, and Kossar's has been baking bialys there without a break since 1936. In Białystok it vanished together with the people who knew it, and came back only in 2020 — as an entry on the ministry's list of traditional products.
