The cafe in Pisa has the third-oldest pedigree in Italy - after the Florian in Venice and the Greco in Rome - and it was opened by an aristocrat who wanted a place open to everyone, with equality and free speech at the tables. It was named by the French hussars quartered in the same palazzo, so Pisan coffee is named after the cavalry. Later, students read Mazzini at those tables, until in the end they walked out of there straight to the front, at Curtatone and Montanara. A cafe as the assembly point for a volunteer battalion is a function no place today still performs.
