Specialty coffee in Ischia

On Ischia a rabbit is not kept in a hutch but in a fossa - a pit dug three or four metres down into the tuff, where the animals burrow their own tunnels and feed on vine leaves, broad beans and wild herbs. That is where coniglio all'ischitana comes from, which on the island is a Sunday ritual rather than an item on a menu. The native breeds, liparina and a' paregn, have all but dissolved into crossbreeds, and a handful of breeders under the Slow Food banner are now digging out the abandoned fosse. The island everyone knows from the water is best told from the hole in the ground.
